Organic Damsons (Demeter) poached slowly to loosen stones which are removed (very time consuming!!).  Pure sugar added and the fruit is then cooked until setting point is reached.  Very different flavour to plum jam with a dynamic purple/red colour.  Really delicious.  For the jam connoisseur.  Delish.
